Australia's supermarket shelves are full of olive oil. And yet, for something used almost every day, very little of it feels worth thinking about.

Most oils are built for shelf life, price and consistency, often at the expense of freshness, character and origin. What should be one of the most expressive ingredients in a kitchen has quietly become one of the most forgettable.

PRESSA exists to reset that.

Not all oil should be the same. And not all oil should be used the same way.

PRESSA is the oil you leave on the bench, the one you'd bring to the table, the one worth showing off.

Our Olives

We press, bottle and share the olive oils of Australia and we think about it the same way good winemakers think about grapes. Different regions, different soils, different seasons. Each one shapes the oil in the bottle. That means different flavours, different personalities and every release a one-off.

Our first release for 2026 features a bright, single origin harvest from coastal Victoria. Fresh, vibrant, and exactly the kind of oil worth paying attention to.

One thing to remember though: olive oil is nothing like wine. It doesn't get better with age. Freshness is everything. The sooner you use it, the better it tastes and the higher its polyphenol count.
